Kale has never been so popular. It's today's culinary little black dress. It's everywhere. You can't turn around without a kale recipe smacking you in the face.
That's a good thing in my book. I've had kale on my table at least once a day for months. It's one of the most nutritious greens available, rich in vitamins A, C, and K, plus calcium, potassium, iron and fiber. Plus I really like it - and so does my family. We eat it raw in salads, blended into smoothies or soup, sauteed over pasta, or baked into crisp "chips."
I can get fresh kale all year in southern California, but in other parts of the country it's a spring crop. Bring home some kale and try it in a recipe or two. Here are a few of my favorites. Enjoy!
