I'm crazy for truffles. It's something pheromonal, I've decided. Like the way you brush up against a guy (or girl) you never thought about in that way, and all of a sudden something inside you starts to melt and all you can think about for days is him (her) in various states of undress. Something chemical, unpredictable, uncontrollable, irresistible.
That's how I feel when a truffle, any truffle, crosses my path. I've got a lingering fondness for black summer truffles, my gateway drug into this whole truffle obsession. I swoon over the ultra-expensive winter truffles from Alba or the Perigord. And I'm downright gaga for Oregon truffles, born right here in the US of A. They're affordable and available at farmers markets on the West coast (or by mail order in the rest of the country). I love their jaunty swagger, their in-your-face musk.
Here are my favorite truffle recipes. Take the plunge and buy a truffle, be it fresh, canned or frozen. I can't promise it will change your life, but I guarantee it will brighten your day.
