Today's Superfood: Beets
Betalains (a phytonutrient), folate, manganese, fiber, potassium, vitamin C
At the urging of my enthusiastic health coach Rachael Pontillo of Holistically Haute Wellness, I'm continuing to bond with my ultra-powerful Vitamix and explore the world of colorful smoothies. I haven't found a combination I like as much as french fries or mint chocolate chip ice cream, but I'm trying to keep an open mind.
I learned something about beets when I made this smoothie: A little goes a long way. I didn't expect it to be such a glorious ruby red!

Smoothie with beets
A tasty way to get your reds and greens in one healthy drink. If you like your smoothies sweet (I don't), add some honey or agave nectar.
Ingredients
- 1 raw beet, scrubbed but not peeled, cut into chunks
- 2 avocadoes, flesh only
- 2 bananas, peeled
- 1/2 head romaine lettuce, washed and torn into pieces (or 1 romaine heart)
- 1 lime (cut away skin and use flesh, not just juice)
- 2 Granny Smith apples, cored, unpeeled
- 1 cup curly or flat-leaf parsley, leaves and stems
- 2 cups water or ice cubes
Instructions
Put all ingredients into a high-powered blender and blend until smooth. Serve immediately, freezing extra portions in single-serving containers.

Long story, but years ago I was really ill and my blood count dropped so low the Dr. wanted to give me a blood transfusion.
My dad was visiting and taking care of me at the time and started to make me beet and spinach juice. In just two weeks my blood count was nearly normal! Beets are a superfood!!
Every time I read one of your posts this month, all I can think of is, "Do I get a Vitamix or a Blendtec?" Clearly, it's time for an upgrade at Casa Eating Rules...
What a beautiful color! I adore beets and simply do not use them often enough. This smoothie would be a great afternoon snack.

I am so happy to have found your site on Google Plus yesterday. This recipe looks really good.
I am currently ten months into a year of eating and cooking nothing but Indian food. My breakfasts are usually some sort of yogurt based fruit shake which are called lassies.
I have been looking for some new inspiration have have found it today. I Think I will try your recipe both as is and also with plain yogurt.

Dan - an entire year eating Indian? My family would kill me. Although I think I'd probably enjoy it quite a bit....
I never put yogurt in smoothies as, surprisingly, it is the one food category I just cannot stand. I've never understood why, as I like creamy and I like sour. Just not together, I guess. Don't like sour cream either. Go figure.
Beets are always a struggle for me. I love that you are sharing more recipes for me to try! Sorry I've been a bit absent lately. I'm try to get into the swing of a new work schedule. Please know that you and your blog are some of my favorite parts of the week. I hope you are having a delicious day!
Monet, I hope the new job is treating you well! You'll get used to the schedule...just remember to sit down and put your feet up for a few minutes, even if it doesn't happen until midnight!
I made this today and just loved it. I used frozen bananas instead of fresh, and coconut water instead of water. No sweetener needed. Perfection. Next time I will add kale as well.

Your recipes sound really good, tasty and healthy. Is there a reason they don't have the calorie breakdown? I like smoothies any time.
@Anonymous no particular reason except the program I use to format my recipes doesn't offer that feature and I haven't gone elsewhere to find it. It's on my long-term to do list. :)
